4-ingredient Healthy Fudge – Choc Peanut Butter or Coconut (gf/vg/df)

An easy healthy fudge with only 4 ingredients you likely have in your pantry. It’s all natural, gluten free, refined sugar free and vegan. Because dessert can be healthified….

This week at work we held our annual Cancer Council Australia’s Biggest Morning Tea to raise much needed funds for cancer research, education and prevention. An organisation that is no doubt close to many of our hearts.

Everyone at works get involved in a “bake off” competition about who’s dishes look and taste the best. Last year we also had a “healthiest” award, which I won… of course! haha. So yes each year I make something gluten free, refined sugar free and as nutritious as I can. Because I love to show everyone that desserts and treats can be healthy too!

There are so many scrumptious dessert recipes we can make that use good quality nourishing ingredients, filled with micro nutrients, antioxidants and fiber, and avoid processed ingredients and empty calories (like my Raw Vegan Raspberry Cheesecake Bites!). I opt for recipes that contain good quality healthy fats like coconut oil or olive oil or nuts. Recipes with a source of protein like eggs, nuts and legumes (black bean brownies are amazing!), or even add in a protein powder. And even recipes that hide vegetables in desserts (carrot, pumpkin, beetroot, zucchini all make incredibly desserts!). This all helps to stabilize our blood sugar levels and avoids a sugar spike and crash that processed, refined carbs desserts do. I don’t know about you but sugar makes me so jittery and nauseous (probably because I don’t usually eat it), and I don’t enjoy a big sugar crash afterwards. It is known that refined sugar also affects our gut health, immune, brain, heart, mood, hormones, and waistline.

Essentially, my desserts have health benefits!

This healthy fudge is gluten free, dairy free and vegan. I made 2 different flavours of healthy fudge here, layered them and drizzled with melted dark chocolate. You can make them like this, or just make 1 flavour at a time. Cut into little bite sized pieces (portion control game strong here!) and keep in the fridge or freezer.

Healthy Fudge Recipes:

Healthy Coconut Fudge (gf/vg/df)

  • Servings: 12
  • Difficulty: easy

Ingredients

  • 2 cups desiccated coconut (unsweetened)
  • 1 tablespoon 100% pure maple syrup
  • 3 tablespoons coconut oil (unrefined), melted
  • pinch salt

Directions

  1. Put coconut in a high powered food processor and blitz until creamy
  2. Add in maple syrup, coconut oil and salt. Blitz again until creamy and sticky
  3. Line a small baking tin or container with baking paper and pour/spoon fudge mixture in. Press down with the back of a spoon and smooth the top.
  4. Refrigerate for 1 hour until set (or freeze for 15 minutes)

 

Healthy Chocolate Peanut Butter Fudge (gf/vg/df)

  • Servings: 12

Ingredients

  • 1 cup organic peanut butter
  • 1/2 cup coconut oil (unrefined), melted
  • 1/2 cup raw cacao powder
  • 2 tablespoons 100% pure maple syrup
  • pinch salt

Directions

  1. Put coconut in a high powered food processor and blitz until creamy
  2. Add in maple syrup, coconut oil and salt. Blitz again until creamy and sticky
  3. Line a small baking tin or container with baking paper and pour/spoon fudge mixture in. Press down with the back of a spoon and smooth the top.
  4. Refrigerate for 1 hour until set (or freeze for 15 minutes)

    Going to try those but without peanuts… perhaps almonds 🙂 they look so good and are easy and quick to make!
